My birthday was on June 4, can’t believe I’m already 28 years old. Being honest I am already panicking about my 30th birthday. LOL! Every birthday needs a cake in order to be a birthday. Right!? So I wanted to make my own Cheesecake since I do love it so much. But I didn’t want to make any kind of Cheesecake; I wanted to make a Keto one. So here is my Keto Cheesecake Recipe that I made. It was delicious! Even my kids enjoyed it, so definitely a kid-friendly recipe too. So here is my recipe and let me know if you liked it.

First, preheat the oven at 350 degrees. Then combine the melted butter or coconut oil with the flour. And pour into silicone cupcake liners (1-2 tsp) and press. I did use a cupcake baking pan for easy serving. Additionally, I used silicone cupcake liners that I loved because they are non-stick and reusable. Also, everything pops out without difficulty, very easy to clean and it is a good alternative for the environment, as well to save money. Ok, back to the recipe. Let the crust bake for 5-8 minutes or until golden brown.
While crust is in the oven, beat the cream cheese, egg, vanilla or almond extract, salt and sugar.
Spoon your cheesecake filling onto the baked crust and bake for 18-20 minutes.
Let cool completely and add a desired topping.
