Keto Chocolate Coconut Cake

Last week I decided to make a Keto Chocolate Coconut Cake because I was craving something with chocolate. Who doesn’t love chocolate? When I’m craving something, I look for ways to bake in a healthier way. This cake definitely came out extremely delicious and it’s not difficult to make at all. I am so excited to be able to share it with you.

Recipe: First, preheat the oven to 350 degrees. Then combine the almond or coconut milk, eggs, and vanilla extract. I used the Watkins Baking Vanilla Extract; it is flavorful and made with natural ingredients. Next, add the almond flour, unsweetened cocoa powder, salt, and baking powder. Mix well with a stand or hand mixer. For the unsweetened cocoa powder, I recommend the Hershey’s Cocoa that is 100% cacao and naturally unsweetened.

After everything is well combined pour the mix into an 8-inch baking pan that has been greased and has parchment paper as well. Put the cake into the oven and bake for approximately 15 to 17 minutes or until a toothpick in the middle comes out clean.

Frosting: While the cake is baking in the oven; melt the unsweetened chocolate chips and peanut butter in the microwave. Melt using 30 second intervals and mix in between warm ups. Do this until completely melted and combined. For the unsweetened chocolate chips I used the Hershey’s Sugar-Free Chocolate Chips; these are very rich and flavorful. And for the peanut butter, I used the Adam No-Stir Peanut Butter that is very creamy.

After the cake is completely baked, wait a couple of minutes before taking it out of the baking pan. Then top the cake with the frosting; melted chocolate/peanut butter and sprinkle the unsweetened coconut flakes. You can add any nuts if desired.

If you want a double layered cake, like the one I made, just make the recipe twice. I put frosting in between both layers and added coconut flakes as well.

It is definitely a tasty and delicious cake. My kid’s reaction when eating it was priceless. They loved it and were asking for more. So, without a doubt, this Keto Chocolate Coconut Cake is kid approved too. Woohoo! This cake makes the perfect dessert for any occasion; the best part is that it is healthy.
